I know I know, all you Minnesotans and East Coasters are happily skipping through fallen leaves, enjoying your pumpkin spice lattes (hot not iced), and pulling out your cute hoodies and booties. But for all of us here in LA who are still trying to survive the hottest part of summer in 100+ degree heat, here is a quick, fun, easy way for you and the kiddos to cool down. Homemade popsicles! Plus they are an easy way to sneak in some veggies! I like to use strawberries, spinach, and a squeeze of lemon for a bit of tartness. You could also add milk or yogurt for a creamier popsicle. Basically any smoothy will turn into a yummy, healthy, frozen snack. Just pop them in the freezer!
my favorite popsicle molds are these from zoku: zoku classic popsicle molds
strawberry spinach popsicles
1 lb strawberries trimmed
large handful spinach stems removed
juice of 1/2 lemon
splash of water to blend
puree all ingredients in blender. pour into popsicle molds and freeze overnight. will last in freezer for up to one week.
